Cheeky Nibble Banana Bread Muffins

Banana Bread Muffins made from Banoffee Pie granola, with toppings like banana chips, nuts and chocolate chips

First things first, let's talk about the star of the show: Cheeky Nibble's Banoffee Pie granola. This delightful blend of banana and caramel oats, banana chips and vegan white chocolate pieces adds a unique twist to your traditional banana bread muffins. It's like a party in your mouth, and everyone's invited!


  • 4 bananas , about 1 cups, mashed

  • 1 large egg

  • 15g vanilla extract

  • 45g light brown sugar

  • 30g granulated sugar

  • 2.6g ground cinnamon

  • 4.8g baking powder

  • 4.8g baking soda

  • 3g salt

  • 188g of all-purpose flour (white or white-whole wheat)

  • 28g unsalted butter , melted (or substitute applesauce)

Topping choices:
  • Dark Chocolate

  • Nuts

  • Caramelised Nuts

  • Banana or Fruit Chips


1. Grease and line muffin tins with muffin/cupcake liners.
2. Mash bananas in a mixing bowl.
3. Add egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to
4. In a separate small bowl stir together flour, baking powder, baking soda and salt.
5. Add to banana mixture and stir to combine.
6. Stir in melted butter.
7. Fill in batter half way.
8. Add in 2 teaspoons of Cheeky Nibble granola or any topping of your choice to
each separated batter and mix well (you can also add the toppings on to the batter
as garnish before baking).
9. Bake at 180 degrees C. for 35-45 minutes or until a toothpick inserted into the
center comes out clean.
10. Allow to cool in the pan for 5-10 few minutes before inverting onto a wire cool-
ing rack.
